Excellent source of information
This book has some wonderful information on Celiac disease as well as excellent recipes. One that I love is the all purpose flour (gluten free). I have used it to make pizza dough (wonderful) and a lemon squares desert(very tasty) and I'm going to try my favorite recipe for pancakes with it. I would recommend this book for anyone with Celiac desease looking for answers.
Excellent Resource
I have recently been diagnosed with a gluten intolerance. I realized that a major dietary change was going to be necessary, but I had no idea how to begin. After purchasing this book, I'm back in control of my life. The author has the expertise and experience; she knows her subject very well. I learned about wheat/gluten diseases, the differences between them and how to begin coping with my "new" life. If I had any other questions, websites were listed where I could find further help, support groups and sites where I could order gluten-free products and freshly-made meals (delivered)!
I highly recommend this book to anyone with questions concerning gluten or wheat-free living, whether it will benefit themselves or a loved one. You won't regret it (I promise)!
EXCELLENT BOOK!
I was recently diagnosed with Celiac Disease and this book was DEFINITELY a must read. I learned so much about the disease and what food products I will need to eliminate to avoid gluten completely. Jules expert advice, tips, and recipes are a lifesaver to anyone eliminating gluten from their diets, whether for personal reasons or due to a positive diagnosis of Celiac Sprue Disease. The journey has definitely been easier with the help from Jules book. A doctor may be able to tell you what to eat, this book helps explain how to keep your normal life eating gluten free. A heartfelt thank you goes out to Jules E. Dowler Shepard for writing such an informative book.

Repetitive
While there is much useful information in the book, most of the information is repeated throughout. Want to know the tests for gluten intolerance, celiac, or allergy? The author will tell you about them repeatedly. Want to know which grains have gluten and which don't? The author will give you the list several times. Want to know the signs or symptoms of gluten intolerance? The author will give them to you more than once. When the author is not repeating the same information, he is telling you some basics and stating over and over again that a later chapter will go more into depth on that subject. Not a bad book, but it would have been better had it been half as long, or contained more in-depth information.
Informative!
I found this book to be the best without being over the top; not too simplistic, not too technical. It was very informative...so much so that after reading it from the library, I had to own a copy for my personal library!
Great guidance, great history, should open a few eyes
Had the pleasure of attended a talk given by Dr. Stephen Wangen and given that I promised my blog readers ([...]) a book not on this topic, I thought I'd share it at Amazon as well.
The short summary is it should be an eye-opening book for anyone. Dr. Wangen has taken up this issue in a previous book entitled The Irritable Bowel Syndrome Solution as well in his clinical practice where he has become a `go-to' person for those with wheat allergies, gluten intolerance and irritable bowel syndrome (IBS). Given I've been on the dietary fringe for some time, it's easy for me to underestimate the extent to which this book pierces deeply entrenched notions about what's `good' and `healthy' for you. Think about it, this book essentially makes the assertion that this staple of life (bread of life) should be treated more like a toxin and should only be consumed as a last resort, given its metabolic effects on the body.
As is often the case with books written by clinicians in active practice, it has more then its fair share of testimonials/case studies. While I understand this approach appeals to lots of people and makes the whole thing less dry for most, I skip over most of them. But they're there for you if you want them.
Found his explanation of the origin of cereal grains and the differences and commonalities among them fascinating. He includes a `family tree' of grains that include all the ones we find in common use today: wheat, oats, corn, rice, spelt, etc.
Having known very little about IBS, celiac disease and the like, it was enlightening to have him clearly delineate the differences among these conditions and state categorically that these `conditions' only persist as long as you consume the offending item (wheat or gluten as the case may be).
The only major issue I had with the book is the repeated reference to an extremely wide range of symptoms that might lead you to consider whether you might have an allergy/intolerance. There were instances where, after I read the list, I wondered what adverse condition was left out. So that's where I'd include a gain of salt. He also spent a lot of time describing the diagnostic methods he uses to make a determination as to what might be at the root of issues you're seeing. Got a sense that these sections were more directed at his peers whose patients might pick up the book and ask their doctor's about it. Wouldn't want to leave out stuff that would clearly show you knew what you were doing since the book is likely to wind up in the hands of other physicians either directly or indirectly.
So, the bottom line is it is well worth the read if you or someone you care about has issues with wheat or gluten. It is also of interest to those who are not so wedded to our revered food staple (bread) that they might be considering giving it up to better their health.
The best book I've read about gluten intolerance
This book is an incredible resource for anyone suffering from an adverse reaction to gluten or wheat. Dr. Wangen dispels the theory that celiac disease is the most serious form of gluten intolerance and instead claims that ANY gluten sensitivity can endanger a person's health and must be treated with a strict gluten-free diet.
The doctor describes the differences between celiac disease, non-celiac gluten intolerance and non-gluten wheat allergy. The medical terminology is clearly explained without ever being dumbed down, and there are case studies that further the reader's understanding of the numerous expressions of gluten intolerances and wheat allergies in different people. Additionally, in the back of the book there is a question and answer section that is impressively comprehensive. After reading this book, absolutely all of my questions were answered.
For me, the most helpful part of the book was the flow charts of tests for celiac disease, non-celiac gluten intolerance, wheat allergy and gluten allergy. They broke down the myriad tests into a logical progression of diagnoses. Dr. Wangen also explains the fallibility of certain tests and offers advice for additional testing that can increase a person's chance of getting the most accurate diagnosis. This book is an invaluable resource. I cannot recommend it highly enough.
Literally changed my life.
I read this book after I discovered Coeliac Disease was not the only form of wheat intolerance. It's a very easy read and much of the information really struck a chord with me. After reading, I felt certain I ought to try a wheat-free diet and after discussing it with my doctor, I did exactly that. It's been almost two-months since I went 'gluten-free' and I have never felt better. My allergies have almost disappeared, I have more energy, need less sleep, the condition of my hair and skin has improved and I'm feeling slimmer and trimmer every day. Massive results, all inspired by this book. I wish I'd read it 10 years ago.
I also loaned it to a friend who has been puzzled over her son's health issues and she agreed that it was truly amazing information.
The information is authoritative and thorough and makes a convincing case for the prevalence of wheat intolerance.
Obviously you have to weigh up the information in relation to you own circumstances, but if you suspect a wheat intolerance, or even if you have a niggling, unexplained health issue this book is certainly worth a read.

If you have to be gluten free you should have this book
Try going on a gluten free diet for six months and you will want this book. Because after six months, you will be willing to make some compromises, Bette's recipes are a whole lot better than anything else gluten free. My very worn copy has many book marks sticking out of its top marking favorite recipes, and food stains from being on the counter while making countless meals.
No gluten free flour is the same as wheat flour. In fact, any single gluten free flour is awful. But Bette has devised mixtures of gluten free flours that can be used in place of wheat with decent success. Featherlite, my favorite, has rice flour, tapioca flour, cornstarch and potato flour and it is the closest to wheat flour of anything I have found.
To the fellow reviewer who had trouble finding the chicken pot pie recipe, the crust recipe (labeled biscuit recipe) is on page 279 and the filling recipe is on page 72. Try it, the crust is OK. And yes, you are right, wonderful French bread with light insides is not possible. What is possible is batter breads, and no I don't like them as much as French bread made from wheat, but there is the compromise you make after being on this diet for at least six months.
Indispenable for Gluten Free Beginners!!!
We have to be gluten free for a family member and this author has created books that provide easy to understand information. You get the why you are doing what you are doing! Plus recipes that help you learn to convert your old way of cooking to the gluten free. They are great!
So many "comfort" foods missing!!
I hate to give this book only 2 stars because there are some great recipes. I have to give the low rating becasue it's not really a "comfort" cook book. I was born and raised in the south and was disappointed that these classic "comfort" recipes were not in the book: fried chicken, fried okra, fried green tomaotes. There are no corn bread or grits recipes. I have to disagree with the person who said the chicken pot pie crust was not in the book. it is on page 279. This mix is for several recipes. I made it for the hamburger pie - which is great. My son loved it! I have not made a lot of recipes in this book ,but glad I have it and plan to try more. I think a better title would have been "quick and easy". Most of the recipes don't have a lot of ingredients, but you do have to make your own flour mixes. This is standard with any gluten free cook book.

Everyone has already said how great this cookbook is and the author was one of the first to develop recipes for celiacs so they could eat regular food again without missing out on baked goods.

Facing the realization that my children have food allergies and must learn to eat differently than they are accustomed is a daunting task. This book helped to continue the conversations I've been having with them to understand that they aren't alone with food allergies and that food isn't what makes life fulfilling. Eating Gluten Free with Emily
This book is excellent for anyone with a child newly diagnosed with Celiac Disease or for explaining it to your child's friends or classmates. I would like to see it reprinted so that it is easier to find in Canada, and perhaps relaunch with an Ethan instead of Emily. However my kids got a lot out of it and have a better understanding of the disease and the new way of life in our home. Thumbs up!
Terrific book!
When my son was diagnosed with Celiac at the age of 4 years, I sought out all the information I could. I especially wanted to find something for my son so he could understand about Celiac and that he wasn't alone. This has been a terrific book in both regards. It is one of his favourite books and he has taken it to school to share with his classmates each year. It is very well received and goes a long way to educate on a child's level and to make others aware of the difficulties a child with Celiac faces in everyday life. Many of the classmates will go home and tell their parents about gluten which in turn has meant several families bringing in gluten-free cupcakes and snacks to the classroom for special events. I've fielded several phone calls and emails over the years from parents wanting to know more about Celiac and how they can include my son. Definitely a great purchase!

Best book to buy when you just find out your child can't eat gluten!
I bought this book for my son over 3 years ago...and I still find him reading it from time to time!
I bought it when we first found out he had Celics Disease and I was on the computer 24/7 finding out all we needed to know. I was determined to make it a fun lifestyle for him. This book made him feel like he was in good company and we love the way the words and illustrations were fun and sketchy. He loves all the ideas of snacks and foods...and what to do when he goes to a sleep-over. My Son is 10 now and is his own advocate, feels great and gained 17lbs. in 2 years and seems to be getting taller every day! (he is still pretty skinny..but we are thrilled overall!) He has been to lots of sleep-overs and birthday parties...and seems totally fantastic with his diet! We give him pancakes, treats, cookies and such so he never feels like his diet is horrible..(plus we want him to gain weight.) This book will give you lots of ideas and websites to visit... but most of all it will help your child feel happy again!
I love this author...and hope she knows how she has helped so many kids. We tell all our newly diagnosed friends to buy this book!
Entertaining and informative
My 6 year old son and I read this together. He is newly diagnosed celiac, I have been diagnosed for about 10 years. It was cute, informative and funny. Although it was really intended for a bit older readership (maybe tweens) he got a lot of the humor, especially with us reading together. And as an "experienced" Celiac, it wouldn't be very informative for me alone, it was for my son and written with humor that made us both laugh (cute illustrations). And I did get some good ideas for child menu alternatives.
Terrific Book!
I was surprised reading over the reviews to find one that said this was not a worthwhile book. I think it is great. I bought it for my daughter a few years ago when it first came out. I used it when I gave a gf homeschool cooking class for her friends to introduce them to what gf foods were. I also found it helpful to have some adults read so they, too, get the full picture of just what we can and can not eat. My niece was just recently diagnosed and I here to order another copy for her and also to help explain what eating gf is like to her younger brother.
ABSOLUTELY STUPENDOUS!
My 13 year old son was just diagnosed a few weeks ago, and we have bought multiple books trying to understand it better. I wish I would have bought this book First. It does the best job explaining CD and answered all my sons questions. We find ourselves referring to it again and again.

The GF Kid answers loads of questions in a fun way
Bought this book after reading many others and it still answered some unanswered questions I had. It's a fun, quick read and I loan it to everyone in our lives so that they can easily understand what my family of newly diagnosed Celiacs is going through (my husband and 3 of our 4 kids!).
It helped the kids themselves a lot too.

This book is a must for those with Celiac Disease. This book will answer all of your questions about glutten and the disease. I strongly recommend that you add this volume to your library.
Gluten Free Awareness
Kudos to Dr. Peter Green and Rory Jones for their highly readable and comprehensive book. With one out of every 100 people being diagnosed with celiac disease and 30 out of every hundred having the HLA-DQ2 and -DQ8 lymphocytes that must be present to be diagnosed a celiac, anyone gluten sensitive should read this book.
In this allergy/reaction to gluten, they have found a cause for most of the autoimmune diseases (i.e. diabetes), plus peripheral neuropathy, depression, dementia, infertility, and cancer. They report the symptoms, which range from migraines, skin conditions, bloating, diarrhea, constipation, broken bones, to no symptoms whatsoever. Laboratory tests are listed to diagnose the condition with a discussion of their accuracy including the false positives and negatives. Some diet information is given and suggestions on how to adapt to a life style that involves no gluten. And the emphasis is on NO as the effect on the patient's health can ultimately lead to cancer.
Where I disagree with them is in their promotion of a low fat diet. Low trans fat, yes, but not low fat. A healthy diet has moderate amounts of good fats including saturated fats. See: Barry Groves "Trick and Treat" and Anthony Colpo's "The Great Cholesterol CON". Without an adequate amount of fat you are hungry all the time, eat more carbs, and gain weight. They state that "nutritional deficiencies are common in those with celiac disease on a gluten-free diet." Many cultures in this world were never exposed to gluten until modern times, yet they managed to survive millions of years on a gluten free diet. It is this heredity that makes so many people sensitive to the gluten found in some grains. The authors emphasize testing (constantly) and follow-ups to make sure you are adhering to the diet, yet the tests are not very accurate and some invasive. Most doctors do not even have celiac on their radar so you will probably have to be self diagnosed. If it works to solve your health problems you will follow the diet. Reading about the consequences if you fail to follow the diet should give you added incentive.

I have had burning scalp issues and had figured it might be gluten intolerance, but it still didn't seem to clear-up; then, I read that celiacs often have dairy and egg allergies as well. Anyway, I already had given up dairy, so I gave up eggs and now, my scalp feels normal. I also have bone loss, so this book is a great help. All the doctors at Group Health need to read this book!!!!!!! Thank you.
A comprehensive resource written by an expert
This book should be required reading for anyone who has been diagnosed with celiac disease or suspects they may have celiac disease.
Dr. Green covers every conceivable aspect of the subject, from symptoms to related medical conditions to treatment. The section about diagnosis is extremely useful to people who may have had negative test results but still feel they could have celiac disease. Testing in an imperfect science, unfortunately, and Dr. Green explains why tests can sometimes not tell the whole story about a patient's condition. He claims that the gold standard for celiac testing is the biopsy, hands down. This was a useful perspective because many doctors have differing opinions on the subject and claim that other tests (like blood tests) are sufficient for diagnosis.
The book not only describes what celiac is and how it expresses itself in different people, it also offers gluten-free lifestyle advice. Among the helpful topics are: traveling and eating in restaurants safely, how to approach the host/ess at a dinner party, dealing with the holidays, and helping children adjust to a gluten-free diet.
This book, along with "Healthier without Wheat" by Dr. Stephen Wangen, are two essential reads for people who have gluten-related health problems.

Very Useful Information for a Gluten-Free Newbie
Prior to my 4-year-old's arrival, I had zero stomach issues. I am not proud of my old eating habits. Really, I should have known better than to eat six brownie bites at a time. Or almost half an Entemann's chocolate cake in one night. Yes, I actually did eat half a cake. I am disgusted when I look back on the gross things I used to eat in mass quantities. But back then my eating habits were never a problem because I had a stomach of steel and a fabulous metabolism.
Oh, the good old days, how I miss them.
My stomach started bothering me 2 months after my daughter was born and it hasn't stopped since. I'll spare you the details but over the last (almost) five years I have gone from eating everything to just a few things that I am sure don't bother my stomach. I have visited dozens of doctors and I've spent a small fortune on co-pays and blood tests, and even an endoscopy. But when test after test came back inconclusive, I finally took measures into my own hands by doing the Fat Flush Plan.
After two weeks of eating nothing but protein, flax, fruit, and vegetables, I felt like a million bucks. Then came the hard part...re-introducing foods to identify my allergies. The day I ate my first piece of bread I not only had a stomach ache but I also felt itchy and achy and had trouble focusing. So I stopped eating bread and after a few days felt great again. Then I ate another piece of bread, felt sick again, stopped eating bread again, and felt great. It was confirmed - I could not tolerate gluten.
I was elated to find the culprit but nervous too. How was I going to live without bread? Was I going to be able to eat out anymore? Was every single meal going to be an exercise in anxiety and planning? Yes, yes, and unfortunately, yes.
I haven't ingested gluten since November of 2009 and while 90% of my symptoms have cleared up, I still experience stomach aches from time-to-time. The more I read about gluten the more I realize it is hidden in so many unexpected places! So while I've been avoiding the obvious things, I realized I needed a comprehensive list of what to avoid and that is exactly what The G Free Diet is.
I've seen this book in the bookstore but frankly I never considered purchasing it because, well, Elizabeth Hasselbeck irritates me. Sorry, but it's the truth. I don't watch The View, but the things I hear and read about her? They don't exactly portray her in the best light. She just seems immature and too opinionated and if I'm being honest (and petty) her voice annoys me too. I don't know why. But I put my feelings aside to read this book and I have to admit that I loved it and finished it in two days.
The G Free Diet is a fast, easy read. It starts off with the author explaining how she diagnosed herself with the help of her stint on Survivor. She goes on to give a thorough description of celiac disease, advises how to avoid gluten at home and in restaurants, and even discusses going gluten-free for weight management and to help the symptoms of autism.
Did you know that some salad dressings and soy sauces have gluten in them? Blue cheese and brown rice syrup? Rice Crispies and french fries? Toothpaste and sunscreen? Makeup and lotion? Me neither. This book is an enlightening source of detailed information on hidden sources of gluten. I especially loved the section on eating out as that is always such a challenge for me. The appendix with a list of gluten-free brands is also very helpful.
Now the negatives of this book: I'm not crazy about the fact that Elizabeth claims you can "sweat out" accidentally ingested gluten. Sorry but to quote Principal Belding, "That is wrong and ridiculous." I was also kind of surprised to see her marketing a gluten-free lifestyle as a weight management technique. But those are small details in an otherwise excellent book and overall I would recommend this book to anyone struggling with celiac or those who think they might have a gluten-intolerance.

Clear and Practical
I have read other books on Celiac disease, but this book targets how parents can help children with this diagnosis. Celiac disease runs in our family. I have it, my teenager has been recently diagnosed and I have a grandaughter with it. This book clearly spells out ways to communicate about the disease with pre-schoolers up through teenagers and some of the emotional issues that may surface.
The author has fun and useful ideas to make the diet pleasurable for children. She has a great section on school lunch ideas and ways to help friends, family and school be informed.
Kids with Celiac is full of information, but written in an easy to read style. This book is packed with hope and encouragement. It even has a section on how to feed a child immediately after diagnosis. She takes away the panic and gives instead a plan of action. This book is a winner!

When we found out our 2 year old had celiac disease, his doctor recommended this book. It has been a great resource for us. It is easy to read and easy to understand. It is very well organized, making it easy to find the information you need at that particular moment.

I had an EGD and colonoscopy on 2/15/07. The three days before the test were the best I had felt in 4 years. Since I worked in Oncology and was used to seeing patients doing prep for them, I put myself on clear liquids 2 days before the Go-Lytely (sp?). So, I was gf without knowing it for 3 days prior to testing. When I woke up the morning of the test I realized whatever was bothering me had lifted..I hadn't thrown up, the mental fog had lifted, and my stomach pain was gone! My hubby made me go ahead and go to the test anyway, darn him! The doc said I didn't have celiac (I had no idea what he was talking about at the time), but that I had IBS, a hiatal hernia, GERD, and diverticulosis. He gave me a script for Zelnorm and said that should level out my alternating d/c problems in 3 months or so. As soon as I added food back in 2 days after the test the symptoms started all over again: pain, vomiting, reflux, alternating d/c, fog, dizziness, etc..... The Zelnorm didn't do anything but send me the other direction where I basically had no control over my bowels. Not a good thing when you're working 12's at a hospital in direct patient care, especially in Oncology! :) A month later a co-worker told me it had been recalled! I called the doc and they said they stand by their diagnosis and to just follow the IBS diet. I tried eliminating all the things it recommended, to no avail. At this point, I got down on my knees and begged God for an answer. I asked Him to send me an answer however He wanted and I would be listening. I happened to go shopping, which I hardly ever do because I hate it, and while waiting in a long line I saw a magazine cover that listed my symptoms almost to a "T"! I took it home and it talked about gluten sensitivity and celiac disease! So, this was what he was talking about! My husband read it and said it sounded just like me! I tried the diet and 3 days later I stopped throwing up and my stomach pain subsided! I called my doc and they said they still stood by the original diagnosis and I didn't need to be on a gf diet! I told them I was just letting them know out of courtesy so they could put it in my file, my guess is they didn't bother with it. I've never spoken to the doc personally since the day of my testing, and never was told to have a follow up visit either. Some doc, huh? Anyway, after going gf and using the links in the article I was led to a local celiac support group. The only meeting I have ever been able to attend they mentioned your book! The brief explanation of celiac and the GI tract in the beginning are very thorough but easy to understand. Disappointed......most of this info. is on the internet
I guess I know more than I thought I did about Celiac Disease. I purchased this book to increase my knowledge, but I really already knew much what was in the book, or knew where to find the info. on the internet. I actually would have returned the book, however my husband set a glass on it and it left a mark! (anyone interested in a slightly used book? lol!)
Much of what is in the book is easily found on Celiac Disease and other health websites. The first 50 pages gives good info. about diagnosis of Celiac Disease and details about following a Gluten Free diet. For someone who is not familiar with these topics, and who would like to have all this info. at their fingertips, this may be a good resource. However, all of whats written in the first section of the book is easily found on the internet.
The second section, (the last 200+ pages) is nothing but charts listing everything which could be a symptom of Celiac Disease. Again if you Google your symptoms and add Celiac Disease to the search, with a little searching, you can find much of this info. too on the internet. I think this book would be best for a library to carry for people to use as a one time resource book. Also it would be helpful for doctors to have all this info. available to them in one handy package, so they could reference it when a patient presents a number of puzzling, seemingly unrelated symptoms.
That is probably the best use for this book; get it in the hands of doctors, and educate them on Celiac Disease! Maybe I'll pass my copy on to my doctor!

Great referrence book for those with celiac disease and those in the business of gluten free foods and/or consulting.
Helpful information for Celiacs
I realize that this was written with medical professionals in mind, and it reads with a lot of medical-ees. But, if you've suffered from Celiac disease for any amount of time, you've probably already become a mini-digestive specialist anyway (I know I did!!), so it's not too scary. The charts, as another reviewer said, are incredibly helpful. I am newly diagnosed and suffering from multiple nutrient deficiencies, this really helped me to figure out which supplements I needed most (sometimes in life we have to make difficult choices).
THIS IS NOT AN EXCERSIZE IN SELF-DIAGNOSIS, as suggested by another reader. Gluten is a perfectly valid and healthy product for people who do not suffer from an intolerance or Celiac disease, so for God's sake, let your Doctor diagnose you (but give him this book as a gift!!). Wheat, rye and barley have made up the diet of many a successful civilization, so no self-diagnosis with this book, ok? Gluten is not evil, just bad for those of us who tend to make antibodies to it. ;)

Libonati organizes her research into tables and charts that make learning about this disease clear and understandable.
Fully backed up by studies, this book should appeal to physicians as well as the layman looking for answers.
If you even THINK you have a problem with gluten, you gotta read this.
Wow, now I have the answers to the many different symptoms that I have suffered. While I test negative for Celiac, both my husband and I have had less gas, bloating, diarrhea after switching to a gluten-free diet. This has got to be on your bookshelf if you or someone you love has a problem, sensitivity or allergy to gluten. Live a healthier life without gluten by being informed. Now if we could just get the food industry to reduce its use of gluten in so many products, everyone's health would improve.

Quick Reference on Celiac Disease
I have found this book on celiac disease an invaluable resource for living a gluten free life! The information is very straightforward and easy to understand. It makes celiac disease much easier to understand. What I love the most are the lists of what is and isn't exceptable to eat on a gluten free diet. I find myself referencing them often and always keep the book within reach if I have a question about what I can eat! Learning to live a gluten free life, is an ongoing learning process and this book has made the transition so much easier for me. I recently decided to try gluten free diet for my son who was diagnosed with autism. This book has been a true blessing. I carry it with me everywhere I go and have even gotten my son involved in reading it to make sure he knows what to look for to avoid gluten. I bought this book as a gift for my Mom. She absolutely loves it and says she has learned so much. The book has loads of information and suggestions.
Gluten-free, but what about healthy?
I'm just skimming the book over, because much of the information I'm already familiar with. Kimberly Tessmer is an RD(Registered Dietician), and LD(Licensed Dietician). The book does contain helpful info regarding celiac disease. However, I am quite dissappointed with the nutritional content. There are quite a few recipes, but just about all of them contain cheese, and many also contain meat. According to [...] cheese/dairy is one of the worst things you can put into your body. [...] can also inform you of the hormones and antibiotics that they pump into the livestock today. Also, the author repeatedly encourages you to consult with a qualified professioal or physician. Just be forewarned about the medical community's lack of knowledge and/or willingness to diagnose celiac disease for what it is. Mis-diagnosis are quite common as Elizabeth Hasselbeck will attest to in her book. According to Dr. Green in her book The GFree Diet, "In the U.S. less than 5 percent of those who have celiac disease get diagnosed-compared with the roughly 30 to 40 percent diagnosis rate in other countries such as Australia, Italy, and Ireland. The reason- in this country the pharmaceutical idustry provides 80 percent of the money for medical research. Simply put: Since there are no drugs to treat celiac disease, pharmaceutical companies stand to gain no profits from encouraging its diagnosis."
